  • 3/4 cup(s) Grace Margarine
  • 1 cup(s) brown sugar
  • 2 medium eggs
  • 1/4 cup(s) mixed peel
  • 1 3/4 cup(s) raisins, chopped
  • 1/4 cup(s) nuts, chopped
  • 4 cup(s) red wine
  • 1/4 cup(s) brandy
  • 1/2 teaspoon(s) Grace Browning
  • 1/2 cup(s) cake and pastry flour
  • 3 cup(s) breadcrumbs
  • 1/2 teaspoon(s) mixed spice
  • 1 teaspoon(s) lime/lemon rind
  • 1 teaspoon(s) lime/lemon juice

Easy Christmas Pudding Directions

Pre-heat oven to 150°C/300°F.

Cream Grace Hello Margarine and sugar together until light and fluffy.  Gradually beat in eggs.

Combine mixed peel, chopped raisins, chopped nuts, wine, brandy and Grace Browning, set aside.

Mix together the cake and pastry flour, breadcrumbs and mixed spice. Add to the creamed mixture along with wine, brandy and fruits.

Add the remaining ingredients and beat thoroughly.

Scrape batter into a greased and lined 9 inch cake tin.

Cover tin with foil and place in a water bath in the oven. Bake for 1 hour or until done.

TO SERVE : Serve with Butter Brandy Sauce.
